Bauman College FacultySusan Arthur, B.A., N.C. Nutrition Consultant Instructor (Santa Cruz) and Distance Learning Mentor Susan is a Bauman College Certified Nutrition Consultant. She has a B.A. in Psychology from Sacramento State University with an emphasis on nutrition and eating behaviors. Susan has worked in the field of nutritional health for more than 20 years. Much of her experience has been in the areas of weight management, blood sugar issues, eating disorders and addictions. She established her private practice, Transformations in Health, in 1998. Her work and her passion is to help people understand the personal benefits of healthier living and to assist them in designing a lifestyle that supports the changes necessary to achieve a higher level of well-being.Maria Balme, B.A. LSW, D.C. Distance Learning Mentor Anasuya directs My Body Wisdom, a holistic health practice since 1996 specializing in strengthening women’s wellness and relieving chronic pain. She is a Bauman College certified Nutrition Consultant and is Board Certified in Holistic Nutrition. Anasuya was on the faculty of the Acupressure Institute in Berkeley for 8 years teaching traditional Chinese medicine theory applications for women’s health, as well as nutrition for pain and depression. She is board certified as a Diplomate in Asian Bodywork Therapy (NCCAOM) and certified by the Upledger Institute in CranioSacral Therapy. Anasuya’s indepth study of handson treatments gives her a vivid sense of the connection between the physical body, nutritional intake, and the mental state. She is also a certified Permaculture Designer with a passion for gardening and nature awareness.Edward Bauman, M.Ed., Ph.D. College President, Nutrition Consultant Instructor (Penngrove) Dr. Bauman has a Masters in Education from the University of Massachusetts, and a Ph.D. in Health Promotion from the University of New Mexico, with original research on Breast Cancer Prevention. He has been a nutrition educator, practitioner, and Director of the Berkeley Holistic Health Center and Heartwood College Wellness Clinic. Dr. Bauman was co-editor of the Holistic Health Handbook and Holistic Health Lifebook, and author of Confronting Cancer in Our Community, Recipes and Remedies for Rejuvenation Cookbook, the Eating For Health Reader, and Eating for Health: Your Guide to Vitality and Optimal Health. He is the President of Bauman College and is involved in administration, teacher training, and curriculum development. Dr. Bauman is also the Director of Bauman Nutrition, a clinical nutrition group offering personalized whole foods consulting and holistic services.Nancy Birang, B.S., MT, ASCP, N.C. Nutrition Consultant Instructor (Santa Cruz) Nancy holds a Bachelor of Science in Medical Technology from Northeastern University and has completed state certified programs in nutrition and western and Chinese herbs. She is an IET/Bauman College certified Nutrition Consultant and instructor of holistic nutrition with over thirty years experience in the healthcare field. As a licensed Clinical Laboratory Scientist, she has worked around the world in hospitals, research labs, and biotechnology companies. Nancy has a private practice in Los Gatos, California, where she enjoys educating, empowering, and supporting clients in making the necessary changes to improve health and well being. In her community, she gives talks on menopause management and other topics relevant to holistic nutrition.Susan Blanc, B.A,, N.C. Nutrition Consultant Instructor (Berkeley) Susan is an herbalist, a Nutrition Consultant with a private practice in Castro Valley, CA, and a passionate whole foods educator. In addition, she has a marketing and business background in conservation and renewable energy consulting and contract installations. Susan graduated from the University of California, Berkeley with highest honors in 1980, studied Herbalism for six years with local and national experts, and in 2007 received her Nutrition Consultant certification from Bauman College. Through her business, Kitchen Table Remedies, she helps clients solve their health problems using whole foods, herbs, exercise and relaxation. Susan teaches regularly at the Castro Valley Adult School, offering both classroom instruction as well as hands-on cooking classes. She has served as a consultant to the California Association of Naturopathic Physicians. Susan is a member of the American Botanical Council, the American Herbalists Guild, and the National Association of Nutrition Professionals.Lynne Condé, P.H.N., M.S.N. Nutrition Consultant Instructor (Penngrove) Lynne has a Bachelor’s and Master’s Degrees in Nursing, is a PHN, and has taught Health and Human Sexuality at Sonoma State University. She has worked with chemically dependent clients within inpatient and outpatient mental health settings, and worked as a diabetic teaching nurse. Lynne has collaborated with Bauman College to create the Kidz Culinary Academy Cookbook, which addresses childhood obesity and teaches children how to make their own healthy foods. Currently, she teaches Fundamentals of Nursing, Developmental Disabilities, and Mental Health courses at Santa Rosa Junior College. Lynne is a member of the Community Action Nutrition Coalition (CAN-C) and serves on the Advocacy and Communities of Excellence (CX3) subcommittees for the County of Sonoma.Cathy Crystal, B.Ed ., N.C.Nutrition Consultant Instructor (Santa Cruz) and Distance Learning Mentor Cathy received her Bachelors degree in Education from the University of Miami in 1976 and her Nutrition Consultant certification from IET/Bauman College in 1994. She is an avid organic gardener, musician, natural food chef, herbalist, and the creator of Nutritional Alchemy Herbal Products. She is the Academic Manager and Distance Learning Administrator for Bauman College, as well as an Instructor at the Santa Cruz school location. Kathy Cummins, N.E. Natural Chef Instructor (Santa Cruz) Chef Kathy is an IET/Bauman College certified Diet Counselor and Nutrition Educator. Her passion for nutrition and cooking began with her studies in Jr. College and resulted in becoming an activist for organic and backyard farming. She was the founder of Happy Trails Catering, specializing in wholesome food for concert musicians. She acted as lead chef at Sequoia Retreat Center in Santa Cruz, California and also served as a baker at the Blue Sun Cafe in Boulder Creek, California. Kathy works in recipe development and preparation of healthy foods to-go for Santa Cruz's Natural Foods Market. She mentors and serves in her community through nutritional education and cooking instruction and active support for organic farmers. Emily Dashiell, B.S., N.D. Distance Learning Mentor Dr. Emily Dashiell is a licensed doctor of Naturopathic Medicine. She earned her bachelor’s degree in Biochemistry and Molecular Biology from the University of California, Santa Cruz. She received her doctoral degree in Naturopathic Medicine from Bastyr University in Seattle, Washington. As a Naturopathic Doctor, Dr. Dashiell blends conventional medical diagnosis and treatment with the use of natural therapeutics, including dietary and lifestyle counseling, nutritional supplements, herbal medicine, homeopathy, bio-identical hormones, and Cranio-sacral therapy. The focus of her practice is in women’s health and pediatrics. Karen Diggs, N.C. Natural Chef Instructor (Berkeley) Chef Karen is a graduate of the California Culinary Academy and a Certified Nutrition Consultant from Bauman College. She has worked in many aspects of the culinary world including cooking at the Mandarin Oriental Hotel in Hong Kong, opening and managing restaurants in Asia and the US, and working with celebrity chefs on many TV cooking shows on PBS. She now combines her love of cooking and knowledge of holistic nutrition to help individuals optimize their health & well-being through private consultations, cooking classes, and public lectures. Jessica Emich, B.A. Natural Chef Instructor (Boulder) Chef Jessica has been a chef for over ten years. She graduated from the University of Nevada Las Vegas with a B.A. in Hotel Restaurant Management. She then moved to San Francisco to study at the California Culinary Academy. After graduating, she moved to Boulder, Colorado to follow her dream and open Trilogy Wine Bar with her two sisters (the three happen to be triplets!). Trilogy has been a local mainstay serving up fresh, organic food for over eight years. Working with local farmers to create menus and creative cuisine is her passion. In addition to teaching at Bauman College, Jessica is currently the Wellness Director at Gold Lake Resort in Ward, CO.Jill Emich B.A. Natural Chef Instructor (Boulder) Chef Jill has a degree in Hotel Restaurant Management from the University of Nevada Las Vegas. She graduated from the California Culinary Academy and then went on to own a successful downtown restaurant Trilogy Wine Bar and Lounge in Boulder, CO for almost 10 years. Jill is the founder of Blissful Sisters Organic Catering Events in Boulder and leads womens groups and local and international retreats which focus on whole food nutrition and cooking instruction. She is also partners with Gold Lake Resort in Colorado where she helps develop wellness programs and is Communications Director. Diane Fischler, B.A., N.C. Distance Learning MentorDiane is a Bauman College Certified Nutrition Consultant. She has a B.A. in Anthropology from the State University of New York at Stony Brook. She teaches nutrition at the Northern California Functional Restoration Program, a pain management clinic. In addition, she works as a nutritionist at Dr. Kristal's Metabolic Typing Clinic in San Rafael. Diane has a lifelong interest in health and wellness, with an emphasis on stress reduction and cardiovascular health. Jodi Friedlander, N.C. Distance Learning Mentor ![]() JJodi Friedlander, N.C., first studied nutrition with Bauman College in 1989–1990, where she earned a Nutrition Educator certificate. After working for many years as a jewelry artist, and still maintaining her passion for nutrition, she took up a writing internship at Bauman College, which lead to her entering the N.C. program, completing it in 2008. She is Board Certified in Holistic Nutrition and has had a private nutrition practice since 2005, specializing in all areas of hormone imbalance for women and men. Marcella Friel, B.A. ![]() Natural Chef Instructor (Penngrove) Chef Marcella received her training in culinary techniques and theories of healing with whole foods from the Natural Gourmet Cookery School in New York, in 1999. Thereafter, she has acquired extensive experience in a variety of culinary settings, including whole foods cooking instruction and kitchen management. Currently, in addition to teaching at Bauman College, Marcella is the kitchen manager at Spirit Rock Meditation Center in Marin County, CA. Mary Sheila Gonnella, B.A., N.C. Nutrition Consultant Instructor (Penngrove) Mary Sheila received her BA in Environmental Education from Sonoma State University and a California teaching credential from Chapman University in 1998. After owning and operating a restaurant in Occidental, CA, she went on to receive her certification as a Nutrition Consultant from Bauman College and is Board Certified in Holistic Nutrition. She is also certified as a Pilates Mat and Rhythm Workout Instructor and has received a certificate in Clinical Ayurveda with DeAnna Batdorff. Mary Sheila has a private nutrition practice called Occidental Nutrition in Occidental, California. There she consults with clients one on one, holds workshops, and teaches cooking classes addressing various nutritional needs. She is currently the lead nutrition educator at Salmon Creek Elementary and Middle School, teaching nutrition and cooking classes school-wide.Julia Hellerman, MHSA Natural Chef Instructor (Boulder)After receiving a B.S. in Psychology from Michigan State University and a Masters in Health Services Administration from University of Michigan, Chef Julia spent several years working in the healthcare and finance industries before turning her passion for good food into a profession. Julia is the owner of Adaba Foods, where she continues to evolve her line of gluten free, vegan, nutrient-dense foods, and also teaches cooking and baking classes at all levels. Specializing in creative, plant-based cuisine, Julia works with individuals to help them embrace foods that are healthy for them and sustainable for the environment. Nori Hudson, M.S., N.C. ![]() Nutrition Consultant Instructor (Berkeley) Nori holds a Bachelors degree in English and a Masters degree in Business Administration and has been an IET/Bauman College certified Nutrition Consultant since 2001. She is Registered with and Board Certified in Holistic Nutrition by HNCB since 2007. Her private practice, Radiant Vitality, is in North Berkeley, CA where she focuses on the health issues of children and the elderly. Nori is passionate about nutrition, food, and gardening. She plans to live to 100 so she can finish reading all books on the subject. Laura Knoff, B.S., N.C. Nutrition Consultant Instructor (Berkeley) Laura holds a Bachelor of Science degree in Chemistry from Florida Atlantic University, and was a Senior Research Associate in the Lipoprotein Group at Lawrence Berkeley National Laboratory for eight years. She is an IET/Bauman College certified Nutrition Consultant and has been studying nutrition since 1975. She is a registered professional member of the National Association of Nutritional Professionals (NANP) and is Board Certified in Holistic Nutrition by HNCB. She is the author of Veggiewoman's Guide to Health, Gluten Free, Dairy Free, Sugar Free Eating. Laura has a private practice at Labrys Healthcare Circle in Oakland, CA where she promotes individualized, varied, whole foods diets, moderate exercise, and skilled relaxation as the keys to optimal health. Denis Lambert, M.S. Natural Chef Instructor (Berkeley) Chef Denis holds a B.S. and M.S in Computer Science from Texas A&M University — Central Texas and worked in this field for the major part of his career. Always a lover of good healthy food, he learned to cook while living in France, where he would follow his French mother-in-law to the local market. There, they would talk to the farmers, shop, and return home to cook. During his 14 year stay in Europe, he learned from direct, personal experience the wisdom of the Bauman mantra, “seasonal, organic, unrefined, and local.” While passionate about all styles of cooking, he specially loves the cuisines of the Mediterranean and North Africa. Dennis is also currently the Monday Night Chef at Spirit Rock Meditation Center, where he prepares wholesome, healthy, vegetarian meals for up to 250 people.Jennifer Lange, B.S., N.C. Natural Chef Instructor (Penngrove) Chef Jennifer is a Bauman College certified Natural Chef, Nutrition Educator, and Nutrition Consultant. She holds a Bachelor of Science degree in Education from the University of Wisconsin – Eau Claire. After leaving a 15 year career as a public elementary education teacher, she followed her other passions, nutrition and cooking. Jennifer teaches at the Relish Culinary School in Healdsburg, and is the owner of Vital Gourmet, a personal and private chef business specializing in healthy gourmet cuisine and nutritional counseling. Fern Leaf, MPH, N.C. Distance Learning Mentor Fern formalized 30 years of personal investigation into both mainstream and alternative healing practices by obtaining Nutrition Consultant certification from Bauman College in 2002. After running a series of public education programs on a number of nutrition related topics, she subsequently received a Master's Degree in Public Health Nutrition with a specialty emphasis on Aging and Public Health from the University of California at Berkeley in 2007. She is now Board Certified in Holistic Nutrition through the HNCB. During an internship with Kaiser Permanente, she facilitated the launch of the Viva Bien Employee Health Promotion campaign to increase healthy behaviors of Latino employees across 11 Kaiser Permanente medical centers in Northern California. Currently Executive Director of the National Association of Nutrition Professionals, Fern also sits on the Bauman College Board of Directors. Erin Livers, B.A., ICNT Nutrition Faculty Supervisor, Nutrition Consultant Instructor (Boulder) Erin holds a B.A. in Journalism from Indiana University and graduated from the Seven Bowls School of Nutrition, Nourishment and Healing in Longmont, CO where she went on to become faculty and Program Director and was instrumental in the school's curriculum development and student nutrition clinic. She also taught nutrition at the Colorado School of Traditional Chinese Medicine. Her integrative approach to nutrition therapy combines studies in Nutritional Anthropology, Functional Medicine, Chinese Medicine and Five-Element Theory, Nourishment and Holistic Healing. Erin also offers public workshops and seminars on a variety of health-related topics.Susan J. Machtinger, B.A., J.D., N.C. Nutrition Consultant Instructor (Penngrove)Susan received her B.A. with honors from the University of California, Santa Barbara and her Juris Doctor from Golden Gate University. She is an IET/Bauman College Certified Nutrition Consultant. Susan began passionately studying nutrition when her son was diagnosed with ADHD and she sought to support his healing through proper eating. She continues to counsel children, adolescents and adults who seek better mental focus and concentration in her private practice in Tiburon, CA. Susan also does public lectures throughout the Bay Area. Brigitte Mars Natural Chef Instructor (Boulder) Chef Brigitte is an internationally known herbalist, raw foodist, and nutritional consultant with over 36 years experience. She is the author of several books, including the best-selling Rawsome!, Beauty by Nature, and The Desktop Guide to Herbal Medicine. She has hosted a radio show called Naturally on Boulder’s local station, KGNU, for over 20 years. Brigitte has a private practice, as well as teaches for internationally respected institutes such as Naropa University, Esalen Institute, Kripalu, the Mayo Clinic, and the University of Colorado. Lizette Marx, B.A., N.C. Natural Chef Instructor (Berkeley) Chef Lizette received her B.A. in Journalism from Chico State University. She is a certified Nutrition Consultant and a natural therapeutic chef. A graduate of Bauman College: Holistic Nutrition and Culinary Arts, she serves on the faculty as a nutrition and culinary arts instructor where she has inspired many students to cook from their hearts, with reverence and positive intention. She also teaches cooking classes at Kitchen on Fire in Berkeley and at the Hacienda de las Flores in Moraga. When not in the classroom, Lizette maintains a private nutrition consulting practice. She is also the founder of Kitchen Treasures™, where she provides small-group catering and cooking classes. Rebecca Mastoris Natural Chef Instructor (Santa Cruz)Chef Rebecca is a private chef and caterer who has been involved in the culinary arts for over thirty years. She has owned and operated her own restaurant, catered the Santa Cruz Blues Festival for 13 years, and worked as a lead chef at Sequoia Retreat Center and Monte Toyon Retreat Center for 6 years. Rebecca is currently involved with an after school program teaching children about nutrition and cooking. Catherine McConkie, N.C.Natural Chef Instructor (Berkeley) Chef Catherine is an IET/Bauman College certified Nutrition Consultant. She is a graduate of the Natural Gourmet Cookery School in New York and also the South Star Academy of Cooking in San Francisco, CA. She has a private business as a personal whole foods therapeutic chef and has traveled abroad while doing this work. Ryah Nabielski, M.S. Nutrition Consultant Instructor (Boulder) Ryah holds a Master of Science degree in Clinical Nutrition from Bastyr University in Seattle, WA and is a Certified Eating Psychology Counselor through the Institute for the Psychology of Eating in Boulder, CO. Before pursuing her career in nutrition, Ryah studied Environmental Studies and Sustainable Agriculture at the University of Wisconsin-Madison and then spent many years working on organic farms. During her time at Bastyr University, she served as the Nutrition Garden Coordinator. Ryah combines her love of holistic nutrition and advocacy for local food in her private practice, Eco Nutrition, where her counseling often includes hands-on approaches in the kitchen and garden. Tom Padrick, M.S., N.C. Nutrition Program Director, Distance Learning MentorTom received a Bachelor of Science in Psychology from UC Santa Barbara, and a Master of Science in Psychology from Pennsylvania State University. He is a Bauman College certified Nutrition Consultant. Passionate about natural foods, Tom devoted 22 years to the natural products industry. He joined the administrative staff at Bauman College in 1995 and went on to become a senior instructor. Tom currently is the Administrator for the Bauman Nutrition clinic and product division of Bauman College. Sumana Pathi, M.S. ,N.C. Natural Chef Instructor, (Santa Cruz) Chef Sumana is a Bauman College Certified Natural Chef. She holds a B.S and a M.S in Computer Science from the California State University-East Bay. A Professional Software Engineer turned a Holistic Natural Chef, born and raised in Southern India, Sumana was compelled by an innate desire to follow the multi-generational trails of ancient food cultures and cuisines. She owes 20 years of experience creating wholesome therapeutic food to her foremost Guru, her mother Vijaya Lakshmi Kumari. She is a wife and a mother of a 10-year-old daughter, has worked at Ayurvedic retreats, Vegan Health Kitchens, Catering Non-profits, and Organic farm festivals. She teaches healthy cooking to elementary kids in Cupertino, and currently owns Sumana’s SOUL Tasting, a company with a focus on Seasonal Organic Unrefined Local foods in South Bay. Christine Ruch Natural Chef Instructor, (Boulder)Chef Christine is a 20 year veteran of the restaurant industry with a professional emphasis on all aspects of restaurant operations. A culinary instructor for the last 10 years and a Bauman Natural Chef graduate with honors, she specializes in teaching and cooking for food allergies. Christine is also a Chef for the Growe Foundation, which implements gardentotable programs and teaches gardening, cooking, nutrition and sustainability in Boulder Valley Elementary Schools in an effort to connect children with the earth and the food on their plate. Natural Chef Instructor (Berkeley) Chef Trudy has a Masters degree from John F. Kennedy University in Holistic Health with a specialization in Holistic Nutrition. She is a Bauman College certified Natural Chef with 20 years experience working in restaurants and catering. In her Personal Chef business, The Healing Hearth, she brings a holistic healing approach to the kitchen. She specializes in nutritional and appetizing cuisine for people healing from illness and seeking a healthier diet. She has worked with HIV/AIDS patients in clinics and food service programs for the last 7 years and is a certified massage therapist. Natural Chef Instructor (Boulder)
Chef Lisa is a chef, food writer, and cooking and nutrition instructor, with more than 25 years of professional experience and training. Lisa was trained at the School of Natural Medicine, and studied at the Kushi Institute. She has written five books on health and nutrition, and more than 700 magazine articles; her work has appeared in Self Magazine, Vegetarian Times, Alternative Medicine, Natural Health Magazine, Better Nutrition, and many others. She has also appeared on nationally televised cooking shows, and has taught cooking and nutrition classes at culinary arts schools and other venues across the country. Currently, she's an owner of Boulder Soup Works, an organic soup company based in Boulder. She also serves on the board of the Psychology of Eating Institute, and is the founder of Inspired Eating and the owner of The Healthy Gourmet.Helayne Waldman, Ed.D. Nutrition Consultant Instructor (Berkeley) Helayne holds a Doctorate in Curriculum and Instruction from the University of San Francisco and is a nutrition graduate of Bauman College. She spent 25 years in the fields of media, education, and training before she decided to formally pursue her lifelong passion at Bauman College. Dr. Waldman also serves as Health and Nutrition Educator for The Hills Swim and Tennis Club in Oakland, CA. She is an avid writer, the Nutrition Columnist for the Contra Costa Times Newspaper Group in the San Francisco East Bay and the Daily News Group on the San Francisco Peninsula. Dr. Waldman is also the producer of two DVD’s: Pre and Post Natal Yoga, and Time for an Oil Change.
