Autumn is fast approaching and the apple trees are drooping heavy with fruit. It's the time of year when we inevitably think about the cooler days ahead, getting ourselves and our children back to school, and preparing our bodies and minds for the upcoming change in seasons.
The time is now to become the most healthful you, to prepare your body for cold and flu season and to prepare your mind for the shorter days ahead. Fortunately, the slowing hectic pace of summer, the final bountiful burst of this years fruit and veggie harvest, and increased in-door time all make for a perfect environment to nourish the body and mind.
Take this opportunity to better yourself through healthful eating and nutrition education.
In this month's newsletter you'll find information on our Nutrition Essentials for Everyone course. This 8-week course teaches the basics of nutritional therapy and healthful cooking to increase confidence in the kitchen and equip you with the knowledge to prepare fresh, healthy, nourishing meals. The rewards of enrollment are a fantastic gift to give yourself and those around you. How better to love yourself and others than through optimal nourishment and care?
In addition, this month's Nutrition Byte is an except from the "Nutrition Essentials for Everyone Workbook." We're giving you a glimpse into the course and hoping to inspire a dynamic shift in overall eating philosophies as opposed to addressing our diet concerns with a quick 'fad-diet' fix. Eating For Health™ is a long-term shift in the way we eat and one which best sustains ourselves, our communities, our environment, and our world.
The September Recipe features a classic nutritionally therapeutic recipe to add to your favorites when cooking to support overall health and wellness.

Antioxidant-Rich Beverages By Ed Bauman, Ph.D. and Jodi Friedlander, N.C.
Optimal amounts of nourishing beverages are an important part of the Eating For Health™ program, starting with pure, filtered water, the most vital of them all. Juices, teas, smoothies, and broths are a wonderful source of antioxidants that protect the body from harmful environmental toxins and acidic metabolic waste. These are the compounds that trigger a systematic inflammatory response, which we want to minimize with fresh plant foods. These healing beverages increase the alkaline-forming minerals, such as potassium and magnesium, which cleanse the blood and tissues and revitalize the digestive and eliminative organs.
To add more cleansing elements to your diet, start the day by making 2-4 cups of herbal tea. Try refreshing blends, such as mint, rosemary, and lemon verbena, or a heartier one of licorice, dandelion, and burdock roots. Also delicious is a red tea, called rooibos, taken plain or mixed with lemon and honey. A general rule of thumb is to use 1 Tbs of loose herbs to one cup of near boiling water. Later in the morning or at noon, make 16 oz of juice from fresh carrots, celery, cucumbers, and an apple, and drink half immediately and the other half later in the afternoon, when you begin to get a bit tired. You can add ground flax seeds, protein powders, and a green powder blends to enrich it with protein, fiber, and fruit and greens extracts.
